Biryani

Biryani is a popular South Asian dish that is made with spiced rice and meat, vegetables, or eggs. Here is a recipe for chicken biryani:

Ingredients:

1 lb. chicken, cut into pieces
2 cups basmati rice, rinsed and soaked for 30 minutes
2 onions, sliced
1/2 cup plain yogurt
1 tbsp. ginger-garlic paste
2-3 green chilies, slit
1 tsp. red chili powder
1 tsp. turmeric powder
1 tsp. cumin powder
1 tsp. coriander powder
1/2 tsp. garam masala powder
1/2 tsp. black pepper powder
3-4 cloves
3-4 green cardamom pods
1 cinnamon stick
2 bay leaves
4-5 cups water
Salt, to taste
1/4 cup oil
Chopped cilantro and mint leaves, for garnishing
Fried onions, for garnishing

Instructions:

Heat oil in a large pot and fry the sliced onions until golden brown. Remove half of the onions and set aside for garnishing.
Add the chicken to the pot and sauté until browned. Add the ginger-garlic paste and green chilies and sauté for another minute.
Add the yogurt, red chili powder, turmeric powder, cumin powder, coriander powder, garam masala powder, black pepper powder, and salt to the pot. Mix well and cook for a few minutes until the chicken is coated with the spices.
Add the soaked rice to the pot and mix well with the chicken and spices. Add the cloves, cardamom pods, cinnamon stick, and bay leaves.
Add enough water to the pot to cover the rice and chicken by about 1 inch. Bring to a boil, then reduce the heat to low and cover the pot with a tight-fitting lid. Cook for about 20-25 minutes, or until the rice and chicken are cooked through and the water has been absorbed.
Once the biryani is cooked, fluff the rice with a fork and garnish with the fried onions, chopped cilantro and mint leaves. Serve hot with raita (yogurt sauce) and/or salad.
